In November of 1997 we went to Belize for a few days of adventure diving and Johnny Cakes. This was the beginning of our Maya adventure, covering three countries. Belize is fairly close to California as we have left in the morning and were drinking Belikins in the same afternoon.  The town of San Pedro on Ambergris Caye is very small and without cars. We could walk from the airport to our not too exclusive hotel, Rubies.   There are many good restaurants specializing in seafood.  The first night we went to find Elvi's kitchen where my close friend Harrison Ford also ate some time ago.

We used Bottom Time Dive Shop.  Ask for Rudy, the divemaster.  Besides diving, there is not much to do.  There are lots of alcohol choices, rum bitters, beer and the ability to make your own rum-based concoction.  One day, we rented a golf cart to tour the island. We covered about two miles and the vehicle kept breaking down.   The island is actually about four streets wide.  We dived two and a half days around the Caye, and then we did a day trip to the Blue Hole.  Laurie got nitrogen narcosis at 130 feet and I felt nothing.  The stalactites are amazing, but otherwise there is only darkness.  We then did two dives around Turnefee Islands. Incredible wall dives and lots of fish and coral.

The beer of Belize is Belikin.  Unfortunately, it isn't imported to the USA.

 

Caribbean Cooking - The typical dish is snapper (black or red reef fish), rice, black beans and fried bananas.   Belize is not known for beef style dishes.    Johnny cakes.  (...or is it journey cakes?)  These are sandwiches generally wrapped to go.  Its just meat, cheese and bread.  Excellent to put in your backpack for mid-dive snacks.
